Le Vigne di Alice
History of the Estate:
Le Vigne di Alice is a product of a collaboration between Cinzia Canzian and Pier Francesca Bonicelli. These two women have a passion for sparkling wines, which shows in the products coming from their perfectly situated Estate in the Prosecco DOC zone. The feminine element is fundamental for this winery- everything from the scent of these delicately perfumed sparkling wines, to the carefully designed packaging reflects the touch of these two women. A relatively new firm, the pair's first harvest generated only 30,000 bottles in 2004. These women are constantly searching to improve in the vineyards and in the winery, although they have already generated much praise from both critics and consumers alike. A true project of passion, these wines reflect both the passion of their makers, as well as the historical greatness of the local terroir for indigenous grapes like Prosecco, Verdiso, Bianchetta and Boschera.

Doro
Varietal: 100% Prosecco.
Vinification: Charmat Method, 10 grams of residual sugar (Brut).
Color: Pale yellow, fine perlage, greenish reflections.
Aromas: Pears, bitter honey.
Flavor: Crisp acidity, fine bubbles, slightly bitter aftertaste.
Food Pairing: Simples fish dishes, clams or mussels.

Prosecco
Varietal: 100% Prosecco DOC.
Vinification: Charmat Method, 14 grams of residual sugar (Extra Dry).
Color: Pale yellow, fine perlage.
Aromas: Unripe apples, pears and acacia flowers.
Flavor: Crisp acidity, fine bubbles.
Food Pairing: Pasta dishes and fish.

Tajad
Varietal: Variable blend of Prosecco, Verdiso, Bianchetta and Boschera.
Vinification: Charmat Method, 10 grams of residual sugar (Brut).
Color: Pale yellow, fine perlage.
Aromas: Wild apples, pears and acacia honey.
Flavor: Crisp acidity, fine bubbles, slightly bitter finish.
Food Pairing: Perfect as an aperitif.
