Ricci Curbastro
History of the Estate:
The Ricci Curbastro family has farmed the land near the Franciacorta region of Lombardia for centuries. This tradition is carried over by the wine-making estate today. The Curbastro estate strives to produce wines of exceptional quality, which uphold a noble tradition of sparkling wine production in this small part of Italy. The family home, Villa Evelina, which is situated on the estate, was designed during the second half of the 19th Century by the famous Brescian architect Antonio Tagliaferri. The building sits atop a large subterranean cellar, where the slow maturation of the Franciacorta wines takes place.
The Curbastro family retains the history of Franciacorta in many ways. Aside from the indigenous wines produced by the estate, the family also owns and curates their own museum, the "Museo Agricolo e del Vino Ricci Curbastro" where visitors can view historic reproductions of ancient buildings, machinery and farming equipment from centuries ago. The estate also offers a bed and breakfast for visitors who wish to truly discover and enjoy the rural world of Franciacorta - a history which would be nearly forgotten if not for producers such as the Curbastro family.

Franciacorta Extra Brut DOCG
Vineyard: Sandy, calcareous soil with high drainage capabilities. The entire vineyard was replanted in 1990 for optimal exposure.
Varietal: 50% Chardonnay, 50% Pinot Nero
Vinification: The Extra Brut is only produced in the best vintages. The grapes are carefully chosen, de-stemmed and gently pressed. This liquid is fermented both in stainless steel and oak, fallowed by a long fermentation in the bottle. The wine ages in the bottles according to traditional Franciacorta production, for 42 months, after which the yeast cells are removed from the bottles much as in the traditional Metodo Classico. Following the sbloccatura (disgorgement), a liqueur containing unfermented grape juice is added in order to initiate the second fermentation. The Franciacorta remains in the bottle for some time until it is released.
Color: Golden yellow with fine and persistent bubbles.
Aromas: Intense yeasty scents hinting of toast.
Flavor: Well-structured and soft with varying yeastiness. Hints of mountain grasses. Well-balanced with a long finish.
Food Pairing: Pairs well with appetizers, oysters, truffles, shellfish and smoked fish.

Franciacorta Saten Brut DOCG
Vineyard: Sandy, calcareous soil with high drainage capabilities. The entire vineyard was replanted in 1990 for optimal exposure.
Varietal: 100% Chardonnay
Vinification: The Saten Brut is produced with the estate's finest Chardonnay grapes. After fermentation in small oak barriques, the wine is bottled and aged for at least 36 months before the yeast cells are removed in the sbloccatura (disgorgement) process. The liqueur is then added and the second fermentation is allowed to take place in the bottle, but in such a ways as to guarantee a minimal atmospheric pressure (around 4 atm.). The wine then spends another few months in the bottle before release.
Color: Pale golden-yellow with very bright reflections and very fine bubbles.
Aromas: ripe peaches and yellow apples, fine yeastiness and spicy almond tones and toasted bread.
Flavor: Very fine bubbles, soft and elegant on the tongue with a lengthy finish. Yeastiness balanced with a delicate acidity.
Food Pairing: This wine accompanies any course in a meal from the appetizers to the cheese course. Pairs especially well with white meats and fish.

Terre di Franciacorta Bianco

Varietal: 50% Chardonnay, 50% Pinot Bianco
Vinification: The Fianciacurta Bianco is produced with the estate's finest Chardonnay and Pinot Bianco grapes. After a short fermentation in small oak barriques, the wine is bottled and aged for at least 36 months before release.
Color: Pale golden-yellow.
Aromas: Ripe peaches and yellow apples.
Flavor: Dry, crisp minerality.
Food Pairing: Pairs well with cream sauces, risottos and grilled fish.
