Azienda Agricola Grillo History of the Estate:
Azienda Agricola Grillo The Grillo estate was founded by Sergio Grillo in the early 1970's. Today his daughter Anna runs the estate. She is assisted by winemaker Lino Casella, the winery's principle enologist for over ten years. The philosophy of the Grillo estate is to unite the ancient traditions of local winemaking practices with modern technologies so as to produce the highest-quality and most sincere wines possible. TheGrillo winery's commitment to the indigenous grapes of Friuli is evident in their portfolio of wines- Schioppetino and Tocai Friulano being among the most important. They are committed to preserving such ancient and under-represented varietals, and are especially excited to be able to share them with an international marketplace.

Refosco Vineyard: These vineyards are situated on gently rolling hillsides

Variety: 100% Refosco

Vinification: 15 day fermentation on the skins followed by 18 months refinement in large oak barrels.

Color: Deep purple with garnet reflections.

Aroma: Violets, black currants, bing cherries.

Flavor: Black stone fruits, earth, round tannins.

Food-Paring Suggestions: Typical Friulian dumplings, fatty meats, aged cheeses.

Sauvignon Vineyard: These vineyards are situated on rolling hillsides.

Variety: 100% Sauvignon

Vinification: All stainless-steel fermentation with a total of 2 months on the lees.

Color: Pale yellow with sunny reflections.

Aroma: Fresh peppers, sage and other aromatic vegetation abound.

Flavor: Soft and intense on the palate with lovely acid structure.

Food-Paring Suggestions: Pairs well with light appetizers, soft cheeses and fruit salads.

Schioppetino Vineyard: These vineyards are situated on gently rolling hillsides.

Variety: 100% Schioppetino

Vinification: The grapes are left to dry on straw racks for some time in order to concentrate their flavors and sugars. After initial temperature -controlled fermentation in steel tanks the wine is transferred to French oak tonneaux for at least 12 months before bottling.

Color: Deep ruby red.

Aroma: Red berries predominate with undertones of vanilla, musk and fennel.

Flavor: Hot in the mouth with a lengthy finish- lots of berries and fennel with a beautifully acidic backbone.

Food-Paring Suggestions: Wild game, venison and grilled red meats pair well with this wine.

Tocai Friulano Vineyard: These vineyards are situated on gently rolling hillsides

Variety: 100% Tocai Friulano

Vinification: All stainless stell fermentation with a total of 2 months on the lees.

Color: Pale yellow with greenish reflections.

Aroma: Bitter almonds when yound, taking on tons of sambuca and liquorice with age.

Flavor: Beautifully balanced- soft in the mouth with aromatic notes echoing the aromas.

Food-Paring Suggestions: Pairs well with antipasti, cured meats, soft cheeses and raw vegetables.
